The historic heart of the appellation, Soave Classico extends across the hills between the communes of Soave and Monteforte d’Alpone, the true heart of the area’s identity. In this setting, Collis farms approximately 300 hectares of vineyards in one of the most highly suited landscapes for quality white wine production. Altitudes ranging from 50 to 300 meters, together with marked day-night temperature shifts, support the slow ripening of Garganega while preserving freshness and aromatic complexity. Here, the territory speaks with greater intensity, giving rise to wines of depth, longevity, and strong identity.

VINEYARDS

In the hillside vineyards of Soave Classico, often planted on steep slopes and terraces, the Veronese pergola remains the most widespread training system. It protects the bunches and supports balanced vine growth in a demanding landscape. The terrain makes mechanization impossible: steep gradients and slippery soils require entirely manual work—a true expression of heroic viticulture. Simultaneously, the rows are managed with a biodiversity-friendly approach, leaving flowers and other plants between the vines to preserve natural balance.

SOIL

The soils of Soave Classico are volcanic in origin, with basalt and tuff as the dominant components. These are poor, warm, highly draining soils that force the vines to root deeply, naturally encouraging lower yields and greater concentration. These characteristics are directly reflected in the wines, contributing mineral tension, saline energy, and a structure capable of evolving over time.

ALLEVAMENTO

La pergola veronese rappresenta la forma di allevamento tradizionale della Valpolicella Classica, spesso adottata su terrazzamenti che seguono l’andamento dei versanti. Questa tecnica consente di proteggere i grappoli e di gestire in equilibrio lo sviluppo vegetativo, adattandosi a un contesto collinare articolato. La conduzione manuale dei vigneti, unita all’esperienza dei viticoltori, permette una gestione attenta e puntuale, in linea con gli standard qualitativi condivisi con il gruppo.
