The facilities at Montecurto are composed of two warehouses where grapes are partially dried for the production of the prestigious wines of Recioto di Soave, Amarone della Valpolicella, Arcole Nero and various I.G.T. wines.
The conditions in these warehouses are constantly monitored and controlled by de-humidifiers , while the decrease in the weight of the grapes is read on scales in order to check the degree of drying.
The grapes are delivered in 5 kg. plastic cases and in 25 kg. plastic cases, called 'superplateaux'. The grapes are left to dry for a period from 60 days to 100 days, depending on the variety, before transfer to the winery at Colognola ai Colli for crushing, pressing and fermentation.
