Collis' production begin in its six wineries appointed for the grape processing and vinification: the Cantine di Lonigo, Barbarano Vicentino, San Bonifacio, Colognola ai Colli and Merlara are the historical production plants that take delivery of grapes directly from their members.
At the Corlanzone production plant, selected grapes are gathered and vinified for the 'Quality Project', while the drying plant of Montecurto is where grapes are partially dried under controlled conditions for the production of the prestigious Amarone della Valpolicella and Recioto di Soave wines.
