Grapes: selected Garganega and Trebbiano di Soave grapes.
Production zone: the slopes of the hills to the north of the village of Soave, which extend into the Lessini Mountains to the north. The soil is clay, sometimes gravel.
Tasting notes: pale straw with fine yellow reflections. The intense aroma on the nose brings to mind white peaches. The palate, dry with a good persistent flavour and roundness, shows a harmonious balance, leading onto a finish of fruit and vanilla notes.
Vinification and aging: gentle pressing followed by temperature controlled fermentation and aging partly in large oak casks.
Alcohol: 13% vol.
Food pairing and serving temperature: a good match for fish-based risotto dishes, and second courses of fish or white meats. Makes a refined match with mature cheeses. It should always be served chilled to a temperature of 10-12° C.
