Grapes: Tai Rosso.
Production zone: the historic production zone is around the town of Barbarano Vicentino, with the best grapes coming from the hills.
Tasting notes: a pale, ruby-red colour, sometimes tending towards pink. The perfume is pleasant with predominantly floral notes. On the palate it is identifiable by its red fruit flavours such as cherry and plum.
Vinification and aging: although it is classed as a red wine, the Tocai Rosso is a grape which has few polyphenols and the fermentation and maceration times are consequently reduced. The low temperature during fermentation remains a very important factor.
Alcohol: 12% vol.
Food pairing and serving temperature: at its best served with rich pasta dishes, fine cured meats and noble poultry dishes. A classic accompaniment to the traditional local dish of salt cod and polenta. Serve at a temperature of 16-18° C.
