Grapes: Merlot and Cabernet Sauvignon.
Production zone: the area of D.O.C. Arcole, on the borders of the provinces of Vicenza and Verona, is particularly suited to these two renowned Bordeaux varieties.
Tasting notes: a lively ruby-red colour which takes on brick-red notes with age. A fine and complex bouquet of a combination of the two varieties and pleasant notes of vanilla and wood. Full-bodied and rich on the palate with well-rounded, soft tannins and a persistent finish.
Vinification and aging: this wine was first made in 2001 and has proudly held the Arcole Nero D.O.C. title since 2006. The hand-picked grapes are selected at harvest, 50% Merlot and 50% Cabernet Sauvignon, and are placed in shallow plastic crates and left to dry under controlled conditions for 45 days. The fermentation and 15 days maceration on the skins give a wine which is then blended and matured in small, French, oak barrels.
Alcohol: 13,5% vol.
Food pairing and serving temperature: excellent with grilled and roasted red meats, game dishes and mature cheeses. Serve at a temperature of 16-18° C.
